BREAD WINNER STOUT

 

Bread Winner is an experiment in reducing food waste! Millions of pounds of bread are wasted every day because they deemed cosmetically imperfect or a bit stale. The reality is that there is really nothing wrong with these products and they could be usedin other food applications. We thought lets try to make beer with bread! After all, they are made with many of the same ingredients.

Our plan was to find an artisanal bakery to partner with, take their waste and brew with it. True Loaf Bakery (www.trueloaf.ca) offered to help out but it turns out that it was not a good fit. Why? True Loaf already donates all their excess to the food bank before it in inedible. Other small local bakeries said that they didn’t have a lot of waste, so where is all of this waste. In the end we went to the grocery store and bought a bunch of the 50% off bread. If we brew this again we will find a real source for the bread but, for now, we are just proving that it can be done.

Mashing in for the Bread Winner Stout

The process was pretty straight froward. We took our delicious Dark is the New Light Stout and replaced 1/3 of the grain bill with bread that we dried out under low heat in the oven. Once the bread was dry enough to crumble we cut it up into chunksand Bread Winner Stout is the delicious result.
